Engine temp and thermostats

I have a 1991 w41. What's everyones opinion on the best temp thermostat to run in these? Right now it has a 160f and fans kicking on at 180. I'm thinking for daily driving this maybe a little low. I'm thinking more a 170 or 180 but will have to have someone change the fan temps on the prom. Any input would be helpful.

I think factory fan on is like 220. I had mine changed to 190 on/170 off. Made a nice difference. IMO, having the fan on setting close to or actually at the thermostat setting would result in the fan running too much. I run a 160 thermostat which isn't enough in winter. If you went 190/170, you could swap to a 180 thermostat in the winter. Or just run it all year long.

I threw an aftermarket temp gauge in the car, and the car seems to run at 180-190 with the 160 thermo in it. I even checked the radiator temp with a type K thermometer. and it was 182. something doesn't compute, the cooling fans are not on.but they do turn on once sitting a while. I wonder if they could actually be set higher, but not on purpose. I have to do more testing on the actual temp.

No winters. Summer car only.

The Water outlet port right next to the actual sensor in the thermostat housing. I wanted to put it where the factory one is, but didn't have a socket big enough at the apartment. The actual sensor only reads a little over 100, because its using the quad 4 sensor with the sunbirds gauge. They must have different ohm readings.

I ordered a sensor for the 3100 v6 but I believe I need an adaptor for it. The quads are 3/8 NPT? I think the one I received for the 3100 is 1/4 NPT.
